At Gonzalo & The Princess, we offer a refined fine dining experience in San Pedro, Ambergris Caye, Belize, rooted in culture, craftsmanship, and intention. Our approach goes beyond the plate—bringing together atmosphere, service, and culinary precision to create an experience that feels both elevated and deeply connected to place.

Our kitchen is led by Chef Alan Rosado, whose background spans renowned restaurants in Mérida, Yucatán, including Cosa Nostra, La Tratto, and Kuuk, as well as experience as a private chef. His work reflects a balance of discipline and creativity, shaping a menu that draws from Spanish–Maya influences while remaining grounded in the ingredients and identity of Belize.

At the bar, Nathaniel brings a quiet confidence and precision to every cocktail. Each drink is approached with care and intention, designed to complement the dining experience and reflect the same level of thought and refinement found throughout the menu.

Behind the experience is a dedicated team of professionals whose contributions are essential to every service. While not every name is listed, each member of our staff plays a vital role in delivering the consistency, care, and attention to detail that define Gonzalo & The Princess.
